Chicken Dumplings
Inspired by Juicy Street-Side Dim Sum & Precise Pleating Mastery
This is probably one of my most frequently made dumpling recipes at home—my family loves these deliciously juicy dumplings both by themselves and in clear broth. Generally made with minced chicken thighs as they have a fair amount of fat and are therefore ideal for dumpling filling, you can also make the filling using fatty pork.
The addition of smooth tofu mixed directly into the meat batter is a magnificent professional trick; it holds onto the structural juices during steaming, ensuring an incredibly tender and moist interior that bursts when bitten.
Recipe
- Dehydrate the Cabbage: Mix chopped Napa cabbage with ¼ tsp salt. Let sit for 10 minutes, then squeeze firmly with your hands to wring out all residual liquid. Discard the water.
- Drain the Tofu: Place smooth Chinese tofu on paper towels and let sit for 20 minutes to remove surface moisture.
- The Directional Meat Emulsion: Place ground chicken and light soy sauce in a bowl. Stir vigorously in one direction only for 5–6 minutes until the meat transforms into a sticky, paste-like emulsion.
- Fold the Base: Add the cabbage, spring onions, ginger, garlic, sherry, sesame oil, and white pepper. Finally, gently fold in the crumbled tofu so it integrates without liquefying the mixture.
- Assembly: Place 1 tbsp of filling in the center of a wrapper. Lightly moisten the upper edge with water. Pinch the top center securely, then pleat the edges accordion-style, locking the seam tightly.
- Protect: Keep raw dumplings under a damp cloth to prevent the skins from drying out and cracking.
💡 Chef Notes & Tips
- The One-Direction Rule: Stirring in one direction unfurls the myosin proteins in the meat fibers, creating a matrix that traps juices. Reversing direction destroys this matrix, leading to dry, crumbly dumplings.
- Freezing for Later: Freeze raw dumplings in a single layer on a tray for 2 hours before transferring to an airtight bag. They can be cooked straight from frozen for 7–8 minutes—no thawing required!
- Vegetarian Swap Layout: Omit chicken entirely. Increase tofu to 300g (one full block) and combine with 1½ cups of finely minced gourmet mushrooms (shiitake/wood-ear) that have been seared to remove moisture.
