Recipe
- Roast Eggplants: Preheat oven to 200°C (390°F). Place halved eggplants flesh-side up on a baking sheet, season with salt and pepper, and drizzle generously with extra-virgin olive oil. Roast for 20 minutes, flip flesh-side down, and roast for another 20 minutes until velvety and tender.
- Make Tarator Dressing: Grind garlic and coarse sea salt into a smooth paste on a cutting board. Whisk into Greek yogurt, tahini, olive oil, lemon juice, and cumin until smooth and emulsified. Chill in the refrigerator.
- Assemble & Garnish: Arrange the warm roasted eggplant halves on a serving platter. Spoon the chilled garlic-tahini yogurt dressing over the flesh, then scatter with pomegranate pearls, toasted pine nuts, crispy fried onions, dukkah, and fresh parsley. Serve immediately with warm pita bread!
