This golden aromatic turmeric rice combines long-grain Basmati rice gently fried in spiced ghee with umami stock and turmeric for separate, fluffy grains.

The secret is a strict 1-hour pre-soak followed by dry-toasting the hydrated grains in infused fat before steaming, which coats each grain in a protective shield to guarantee distinct texture. Enjoy the recipe!


Recipe

  1. Soak Basmati Rice: Rinse Basmati rice thoroughly until the milky run-off runs clear, then soak in fresh cold water for exactly 1 hour. Drain thoroughly.
  2. Bloom Spices & Toast Grains: Melt ghee, butter, or oil in a saucepan over medium heat. Sauté chopped garlic, cinnamon stick, cloves, cracked cardamoms, and bay leaf. Add knotted pandan leaves and drained rice, stirring gently for 1–2 minutes to coat grains.
  3. Add Broth & Cook (Choose Route): Pour in water (540ml for rice cooker; 720ml for stovetop). Add crumbled stock cubes, turmeric powder, and salt. Cook via rice cooker automated cycle OR simmer uncovered on the stovetop until steam holes form, then cover and steam on low for 5 minutes.
  4. Fluff & Serve: Remove whole spices and pandan leaves from the surface. Use a fork to gently lift and fluff the steaming grains before serving!

💡 Chef Notes & Tips

  • Jasmine Rice Alternative: If using Jasmine rice instead of Basmati, skip the 1-hour soak entirely and use a strict 1:1 water ratio for a rice cooker or 1:1.5 ratio for stovetop.
  • Vegan Adaptation: Use neutral vegetable oil instead of dairy ghee or butter, and select certified vegan vegetable stock cubes for the umami broth.
