Roast Eggplant with Tahini-Yogurt

Roast Eggplant with Tahini-Yogurt Dressing

Hearth-Roasted Eggplant Halves Topped with Chilled Garlicky Tahini-Yogurt, Pomegranate, Pine Nuts, and Egyptian Dukkah

This Levantine-inspired dish features high-heat roasted eggplants topped with a chilled garlicky sesame-yogurt blanket, fresh pomegranate pearls, and crunchy dukkah.

The secret is roasting the eggplants to a custardy cream, then layering the chilled, acid-forward tarator dressing over the warm flesh to create a delicious temperature contrast. Enjoy the recipe!

Recipe

  1. Roast Eggplants: Preheat oven to 200°C (390°F). Place halved eggplants flesh-side up on a baking sheet, season with salt and pepper, and drizzle generously with extra-virgin olive oil. Roast for 20 minutes, flip flesh-side down, and roast for another 20 minutes until velvety and tender.
  2. Make Tarator Dressing: Grind garlic and coarse sea salt into a smooth paste on a cutting board. Whisk into Greek yogurt, tahini, olive oil, lemon juice, and cumin until smooth and emulsified. Chill in the refrigerator.
  3. Assemble & Garnish: Arrange the warm roasted eggplant halves on a serving platter. Spoon the chilled garlic-tahini yogurt dressing over the flesh, then scatter with pomegranate pearls, toasted pine nuts, crispy fried onions, dukkah, and fresh parsley. Serve immediately with warm pita bread!

💡 Chef Notes & Tips

  • Temperature Contrast: Keeping the garlic-tahini yogurt dressing chilled while the eggplant is warm creates an incredible textural and temperature contrast.
  • Vegan Adaptation: Replace the dairy Greek yogurt with an equal measure of unsweetened coconut or almond milk yogurt alternative.
