Classic Lombardy Saffron Risotto Finished with a Creamy Mantecatura of Cold Butter and Parmesan

This classic Northern Italian risotto combines toasted Carnaroli rice, aromatic alliums, and fragrant saffron threads for a radiant golden color and rich flavor.

The secret is refusing to wash the raw rice to retain its exterior starches, stirring ladle-by-ladle with simmering stock, and performing an off-heat mantecatura with cold butter and Parmesan. Enjoy the recipe!


Recipe

  1. Bloom Saffron & Toast Rice: Steep saffron threads in warm stock from your simmer pot. Sauté finely chopped onions, garlic, and optional minced ginger in olive oil until soft. Add dry Carnaroli rice unwashed and toast for 2–3 minutes until translucent.
  2. Deglaze & Simmer: Pour in dry white wine and cook until absorbed. Add hot stock ladle-by-ladle, stirring rhythmically for about 15 minutes as the liquid is absorbed and starches emulsify. Pour in the infused saffron liquid during the final minute.
  3. Mantecatura Rest: Remove the pan from the heat and let it rest undisturbed for 3 minutes to lower the temperature slightly so the fats emulsify rather than grease.
  4. Beat & Serve: Stir in chilled cubed butter and grated Parmesan cheese vigorously with a wooden spoon until glossy and rich. Spoon onto plates, tapping the bottom so it flows in a smooth wave (all’onda), and serve hot!

  • Choosing Rice: Aged Carnaroli rice is ideal because it has a higher amylose content and firmer structure, making it forgiving and preventing overcooking compared to Arborio.
  • Vegan Adaptation: Use clear vegetable stock, replace the dairy butter with plant-based vegan butter or cocoa butter, and finish with a high-quality aged vegan cheese alternative.
